Owner, Eat & Smile Foods
Eat and Smile Foods provides a variety of culinary services for the greater Washington metro area. Their wide variety of services includes cooking lessons, cocktail parties, and plated dinners. But no matter what the occasion, they pride themselves on creating visually stunning and palate-pleasing food. As a native Washingtonian it was important to Chef Friendly to stay local in both his food and training. He attended L'Academie de Cuisine in Gaithersburg, MD where he learned classic French culinary techniques. He studied under Peter Smith at PS7's, and Barton Seaver at Hook, where he learned different approaches to classic dishes and the importance of locally sourced food. While working for Peter Smith, he taught Chef Friendly about Charcuterie, the crafting of meat into sausages, pates, and cured meats. Currently, he makes his own Bacon, Pancetta, Guanciale, fresh Sausages, and Salumi. After learning this somewhat neglected culinary art he started to teach myself other homemade culinary tradition. Chef Friendly started making his own Yogurt, Labne, and Creme Fraiche using farm market milk. He is also currently making and aging his own Cheddar and Mozzarella cheese.
